the documents you need take half an hour to fill in but the difference is if you do it this way then €40 a night will be taxed and in greece the taxes are very high.
most of the time they have "watchers" looking for the police and they let the owners know well in advance so they pull you off the street and from behind the bars.
working during the day however is much simpler but you tend to spend all your money at night
